Fresh button mushrooms

Small, round and firm, our button mushrooms have a mild flavour and hold their shape well, so they are good eaten raw in salads or cooked into soups and sauces.

Button mushrooms are the most forgiving mushroom to cook because there is nothing to trim and nothing to tear. Ours are picked firm and white, and sold in 250 g punnets.

Flavour and texture

The taste is mild and faintly nutty, with none of the strong mushroom smell that some people associate with the fungus. That makes them the easiest mushroom to serve to someone who does not already like mushrooms. They stay springy when cooked, which is why they hold their shape in a pan instead of collapsing into a mush the way a larger flat cap does.

Small caps are also the best size for a button: the more open the cap, the drier the gills and the more the cooking liquid turns cloudy. Picked young and closed, the gills stay pale and the cap stays plump.

How to cook them

  • Slice thin and fry in butter or oil until the edges brown. Salt only once they have released their water, or they will stay watery in the pan.
  • Add to soups, stews and sauces in the last few minutes. They need almost no cooking.
  • Toss raw into salads. A closed button mushroom does not need peeling.
  • Roast on a hot tray with garlic and thyme for 15 minutes at 200C. This is the best way to bring out more flavour than the mushroom has on its own.

How to store them

Keep them in the fridge in a paper bag or a loosely covered container, and use them within 3 to 5 days. That is the window for button mushrooms kept cold, so plan to cook the ones you bought last. Paper rather than plastic is worth the extra effort: a closed box traps the moisture a mushroom gives off and turns them slimy within a day. If they have already started to soften, cook them rather than putting them back.

Common questions

Do button mushrooms need peeling?

No. Closed, fresh button mushrooms have no tough skin, so you can slice and eat them straight from the pack.

How long do fresh button mushrooms last?

Three to five days in the fridge, in a paper bag. At room temperature they go soft within a day, so keep them cold.

Can I freeze button mushrooms?

You can, but they lose their shape and go spongy. Slice them raw first, spread on a tray to freeze individually, then bag them. They are useful sliced and frozen for soups.

Are these mushrooms locally grown?

Yes. They are grown and harvested at our farm in Nairobi.

How many button mushrooms do you have in a week?

Between 30 kg and 75 kg in a good week, depending on the flush. Order early in the week for the most reliable volume.
